Wild Queen reigns over a kingdom of sour, spice, and fruit. Rich aromas of ripe, red raspberry and tannic oak command the nose. Hints of spicy red wine and leathery Brett balance with flavors of sweet, caramel brandy to give the beer its robust character. She is a carnal endeavor. A tempest of indulgence. A truly Wild Queen.
This is a complex, wild, red saison. At the base of its malt bill is rye, giving the beer a deep red hue and spicy, full body. After fermentation on a Belgian saison yeast strain, it was transferred to CA brandy and MA red wine barrels where it aged on heaps of fresh, local raspberries. During this process, we dosed the beer with two strains of wild yeast, giving it some delicious “funk” and the ability to mature and develop more flavors over time in the bottle. After 3 months, we blended the beer from both barrels into our brite tanks, and hand-bottled them at the brewery.
Our Wild Queen was brewed for Release #1 of the ONCEMADE beer collaboration project. The complete package can be purchased for $45 at Night Shift Brewing ONLY, and includes:

Our Wild Queen Tasting Notes:
Pungent nose of spicy raspberry. Sweet caramel notes from the brandy barrel; oaky, spiced notes from the wine barrel. Increasingly strong Brett characteristics, which will grow even more in the bottle. A really powerful, complex beer – fruity, spicy, sweet, and sour all at once. Tastes more like a lambic than a saison. We’re very OK with that.
